Head To Tail: One Duck - Six Dishes

It's been about 3 weeks or so since I posted my duck breakdown pics as can be seen on facebook as well. (Join the HOT FOOD PORN facebook group!) Since then, I decided to take my duck and be a champion of the head to tail challenge in order to use/savor every little piece of the beautiful animal. The final dish was finished last night: a duo of duck prosciutto. I thought it would be nice to offer a little bit of a photo dedication to my fabulous duck friend (it's kind of creepy, but he looks like he's smiling in the picture in the middle).

The dishes and what/how duck parts were utilized:

Duck Prosciutto Duo: Vadouvan Pine Pollen & Classic Sea Salt Prosciutto
Duck parts used: duck breast

Spam Terrine: Applewood Bacon, Braised Duck, Roasted Chicken
Duck parts used: braised meat/tendon/skin from head, neck, back, liver, heart, wing

Duck Confit Taro Dumpling
Duck parts used: duck legs

Duck and Onion Sprout Rice
Duck parts used: rendered duck fat, tail, duck loins

Duck and Green Onion Consomme
Duck parts used: duck neck, head, torso, offal

Crispy Duck Cracklin Salad
Duck parts used: Duck back skin

Wednesday Night Test Kitchen 2/25/09

So last night was a light Wednesday night, I just tried to focus on 1 thing unlike last week, but I did bake a cake on Tuesday so I'll throw you some pics. On the menu:

Lotus Leaf "Glutinous" Rice Dumpling
-Nishiiki Short Grain Risotto, Chinese Cured Pork Belly, Oyster Mushrooms

Lemon Chiffon Cake
-Two Layered Cake, Candied Meyer Lemon Slices, Marscapone Meyer Lemon Frosting

I didn't have pics of the Rice Dumpling for a few reasons, but here is a step by step of the cake making. Did I tell you I haven't baked a cake in 2-3 years? Rusty, but still got it. Cake turned out pretty good, but the dumpling was the bomb. Hopefully I'll have a finish product pic up soon.

Candy lemons on top, cover with wrap, sticks for protection. I later located the ring that buckled onto the cheesecake pan, so this stupid get-up with the sticks and clear wrap was taken off.

So 7x7 magazine released this story recently about the 100 things in SF that you must try before you die and I've looked over it quite a few times. I've only been in SF for about 2 years and I've already gone through 31.5 of the items on there. I'd say 10-15 more listed are places I've been but didn't order the specific item - not necessarily places I'd revisit. I have to say that this list feels so incomplete - almost like it is built for disappointment considering they have to play within the parameters of San Francisco. There are items here that are good if not great, but there are a lot of things that I feel are sorely lacking in the choices here. Since I don't work for any magazine or have any readership anyways, I will offer you a different list: a list of all the places and food epiphanies during my travels both personal and as a former consultant. I know there's a lot of SF, NY and Boston, but I'm sure the list will include many more international tastes in the future. Saturday Farmer's Market Report - 2/21/09

Sorry for the delay, I totally boofed on uploading the pictures yesterday, but here is the Saturday update. I saw some pretty nice new signs of spring at the market and it turned pretty nice. There must have been at least 4 varietals of pommelos alone at Hamada Farms. All that good stuff and I spotted fresh, first of spring Favas at Iacopi! Woohoo! Greens were looking pretty good, mizuna is nice and spicy. I bit the bullet on the Roti truck Porchetta - laying down 11.50 for a pound, but every bit of it completely delicious and crispy.

Top Ten Sexy Burger Commercial Ads

I watched one and I couldn't stop watching. Here's the compilation as promised in no particular order. I questioned the Paris Hilton commercial because she's useless, but I figure her best calling in life would probably be eating a burger and washing my car, so it made sense.

New School & Old School Food Commercials

Throwing some Monday morning fun stuff. I love this new BK Mini Shots burger commercial for obvious reasons. It's like a 30 second Michael Scott "that's what she said" ad. Ridiculous and fun.
And for old time's sake, I threw in a couple of my favorite old school BK commercials. By the way, I do not in any way endorse Burger King, I don't really like any of their food. I love their commercials though.

Thinking about doing a top 10 sexy burger commercial...hmm wonder if I can find enough goodies on the youtube...
